Watermelon Feta Salad

Equipment

  • 1 Saucepan or Small Stock Pot

Ingredients
  

  • 1 cup water
  • 1 cup white sugar
  • 1 cup fresh mint leaves
  • 1 Watermelon cubed or sphered 1"-2"
  • 1 red onion thinly sliced
  • 1 8 oz block of feta cheese crumbled
  • 1 oz Minced Basil
  • 1 oz Minced Mint
  • 1 oz Minced Cilantro
  • Kosher Salt

Instructions
 

  • Combine water, sugar, and mint leaves in a small saucepan. Bring to a boil over medium heat, stirring until sugar dissolves. Simmer for 1 minute; remove from heat and let syrup steep, about 30 minutes. Strain and hold till ready to serve
  • Add herbs together in a bowl and set aside.
  • Toss watermelon, red onion, feta, and mixed herbs in a bowl and toss.
  • Drizzle with mint simple syrup and salt and toss.
  • Serve with fresh mint leaf and enjoy!
