Oven Roasted Lemon Asparagus

Easy to prepare and pairs well with most proteins.

Ingredients
  

  • 1 bunch of asparagus
  • 2 tbsp olive oil
  • salt/pepper
  • 1/2 lemon
  • 1/4 cup grated parmesan cheese Optional

Instructions
 

  • Pre heat oven to 425 degrees fahrenheit
  • Trim the bottoms off of the asparagus and place on a lined sheet pan
  • Drizzle with olive oil and season lightly with salt and pepper all over, using your hands to coat all of the asparagus evenly.
  • Place sheet pan in oven for 10-12 minutes, or until tender.
  • While roasting zest half of the lemon
  • Lastly once asparagus is removed from the oven, add lemon zest and squeeze the lemon juice over the asparagus, tossing with tongs to get fully coated and enjoy!
  • Optional: Top with grated parmesan cheese to add even more flavor.
