Ingredients
- 1 cup water
- 1 cup white sugar
- 1 cup fresh mint leaves
- 1 Watermelon cubed or sphered 1"-2"
- 1 red onion thinly sliced
- 1 8 oz block of feta cheese crumbled
- 1 oz Minced Basil
- 1 oz Minced Mint
- 1 oz Minced Cilantro
- Kosher Salt
Instructions
- Combine water, sugar, and mint leaves in a small saucepan. Bring to a boil over medium heat, stirring until sugar dissolves. Simmer for 1 minute; remove from heat and let syrup steep, about 30 minutes. Strain and hold till ready to serve
- Add herbs together in a bowl and set aside.
- Toss watermelon, red onion, feta, and mixed herbs in a bowl and toss.
- Drizzle with mint simple syrup and salt and toss.
- Serve with fresh mint leaf and enjoy!
